Meet The Chef
Executive Chef Edgar Valerio is an accomplished sushi chef with over two decades of experience in Japanese cuisine, now leading his own sushi restaurant in the Lower East Side fine dining scene. After training under renowned Japanese chefs in New York City and refining his craft at Jewel Bako, he later helped shape Kissaki's omakase program before pursuing his own vision. After an inspiring journey with Kissaki, Chef Edgar and his son began a new chapter by opening an intimate 16-seat sushi counter devoted to the art of Edomae-style sushi. Blending tradition, craftsmanship, and a deep respect for seasonal ingredients, they offer a personalized omakase experience where every dish reflects the precision and spirit of authentic Japanese hospitality.
